Chicken salad has been a fixture in my kitchen for a long time, long before I started cooking. I have fond memories of Friday night dinners growing up of chicken salad sandwiches and soup. It’s an easy, comforting meal that comes together very quickly. I love making a bigger batch on Sunday and having it throughout the week for lunches. Ingredients

  • 2 boiled chicken breasts, finely shredded

  • 1 scallion, chopped

  • ½ cup shredded lettuce

  • 2 tbsp fresh dill, finely chopped

  • 3-4 tbsp mayo, based on your preference (you can also do half Greek yogurt half mayo)

  • ½ tsp mustard

  • Juice of half a lime 

  • 1 tsp salt

  • Freshly ground pepper 

  • Couple of shakes of hot sauce (I like Sriracha or Cholula) 

  • 1 tbsp relish or finely chopped pickles, optional

Method 

  • Combine all ingredients in a big mixing bowl 

  • Serve on crackers, cucumber rounds, on bread (it’s delicious on pumpernickel), in a wrap, or by the spoonful
