dilly chicken salad
Chicken salad has been a fixture in my kitchen for a long time, long before I started cooking. I have fond memories of Friday night dinners growing up of chicken salad sandwiches and soup. It’s an easy, comforting meal that comes together very quickly. I love making a bigger batch on Sunday and having it throughout the week for lunches. Ingredients
2 boiled chicken breasts, finely shredded
1 scallion, chopped
½ cup shredded lettuce
2 tbsp fresh dill, finely chopped
3-4 tbsp mayo, based on your preference (you can also do half Greek yogurt half mayo)
½ tsp mustard
Juice of half a lime
1 tsp salt
Freshly ground pepper
Couple of shakes of hot sauce (I like Sriracha or Cholula)
1 tbsp relish or finely chopped pickles, optional
Method
Combine all ingredients in a big mixing bowl
Serve on crackers, cucumber rounds, on bread (it’s delicious on pumpernickel), in a wrap, or by the spoonful
