saturday morning rituals - indian style omelettes

Breakfasts tend to be quite rushed or non-existent in our house these days. We have every intention of getting up early and having an idyllic morning with coffee and a paper-but somehow binge-watching Scandal the night before ruins all of that. Which is why I cherish a long walk with the dog on Saturday mornings and then a leisurely breakfast with Doug. A go-to for us are omelettes, Indian Style. This recipe is a papa recipe and the only way I can truly enjoy (read: eat) an omelette. Everything about the crunchiness of the onions, the heat of the chili and the crispiness of cooking the shit out of the egg makes me very happy!  The cilantro is optional for those of you who taste soap, but it really adds some depth.

Indian Style Omelette 

Ingredients

  • 2 eggs

  • 2 tbsp finely chopped onion (you can use white, green, yellow, sweet or red- all are amazing)

  • 2 tbsp finely chopped cilantro

  • ½ tsp red chili (I use jalapeno if it’s in the house, but the hotter the better)

  • Salt and Pepper

  • Olive Oil

  • 2 slices bread (optional)

Method

  • Chop onions, chili and cilantro and set aside

  • Beat two eggs in bowl with a fork, add in salt and pepper and beat some more until frothy. Add in chopped items, beat to combine.

  • Heat 1 tsp olive oil in a non-stick on high heat. Reduce heat to medium high once oil is hot and add in egg mixture.

  • Flip omelette once and then fold into half, and then half again. You want to press down on the egg with a spatula once flipped to make it nice and thin.

  • If making a sandwich, heat the bread on the pan, add a bit of extra oil in the pan if necessary. Flip the bread over, and create a sandwich. Flip the sandwich a few times until bread is nicely browned.

  • Enjoy with ketchup, sriracha, Terroni peppers or with whatever your heart desires!
